If you can’t already tell, I love myself some sweet potato and to combine it with another favourite family love for tacos makes this recipe a big hit. Now I to can join the relatives for Taco Tuesday and best of all you can top it with the usual taco toppings plus more for extract taste and fullness.

  • Pre-heat the over to 200°C. While the oven is heating us a fork to pierce holes all over the sweet potato and place it in the oven. It is possible to use the microwave also. Just cook for 8-10 Minutes or until the potato is soft.
  • Beef
  • In a frying pan add onion, ginger, garlic and chilli paste and cook until golden brown. Add your choice of minced meat (I used turkey mince for this) and cook until brown.
  • Then add the following ingredients: paprika, cumin, turmeric, coriander and make sure your herbs are combined before adding both tomato paste and diced tomato.
  • In a separate pan add your beans and mushrooms and saute until cooked. (You can combine these into the mind if you like)
  • By now your potato should be cooked and ready to assemble.
