Continue with the comfort food for the end of winter and whipped up a Sweet Potato Shepard’s Pie. Nothing beats a rich tomato base filled with winter vegetables and topped with a caramelised Sweet Potato made with a fancy piping bag and made crispy in the oven. Here is my recipe for a delicious & healthy Shepherd’s Pie

Sweet Potato
- In a saucepan boil your potatoes until soft. Drain the water and mash with butter and chives and place to the side to cool. Mince Base
- In a frying pan eat your olive oil to medium heat and saute your onions, garlic and ginger and stir until brown. Add your minced meat and stir until its cooked through and place in a bowl to the side.
- After you have grated and sliced your vegetables at them to the pan and cook until liquid has reduced.
- Re-add your mince mixture. Add the remaining coconut amino, Spaghetti Bolognese Herbs and your 2 cups of Dolmio Hidden Veg Tomato Pasta Sauce and still until combine then place the piece in a backing tray and place in the fridge to cool. (This will allow the mince to set, so it doesn't fall apart when serving)
- Once cooled, top your mince base with the sweet potato in any style you like then place in the oven for 40 minutes or until potato is crips on top.
