Everybody loves a traditional potato salad recipes. Here is one passed down to my best friends mother. It the only potato salad I absolutely love.
- Dice sweet potato into small cubes and place in a saucepan of boiling water and cook for 7-10 minutes depending on the size of the cubes.
- Once cooked was and drain potato cubes and place them in the fridge to cool.
- In a large bowl mix your mayo, chives, dill and garlic powder, pinenuts and fold it through the potato until fully coated.
- Place into the fridge to chill for another hour to enhance the flavours.
