Sweet Potato Nachos

Alot of us are all a big fan of Nachos These PCOS friendly nachos are easy to pull together which is a steal being a crowd favorite or for family nights in.

  • Pre-heat the over to 170°C. While the over is heating slice your sweet potato's into think medallions. (Leave the skin on) In a bowl coat the potato chips in coconut oil and salt and pepper and spread them onto a baking try to cook until golden brown. Be warned potato will shrink so while there may look like a lot now this will not be the case later on.
  • Beef
  • In a frying pan add onion, ginger, garlic and chilli paste and cook until golden brown. Add your choice of minced meat (I used turkey mince for this) and cook until brown.
  • Then add the following ingredients: paprika, cumin, turmeric, coriander and make sure your herbs are combined before adding both tomato paste and diced tomato.
  • In a separate pan add your beans and mushrooms and saute until cooked. (You can combine these into the mind if you like)
  • By now your potato should be cooked and ready to assemble.
  • Gather all your ingredients and layer them on the plate. ENJOY!!
