Curried sausages are definitely one of my all-time favourite foods my mum used to cook me as a kid and while this recipe isn’t one passed down from her, It’s definitely inspired by hers.

Instructions
- Place your sausages in a large saucepan filled with water and add 1 tsp of curry.
- Once sausages are cooked remove skin if necessary and slice them in half and set to one side.
- In a frying pan melt the butter then add sliced onion, ginger and garlic and cook till light brown then add curry and mustard powder
- One the spice is stirred through add in your can of coconut cream. Do this gradually until the sauce starts to thicken. Then add sultana or apples and monkfruit.
- Once sauce is compete add your sausages, stir through and serve along side your carb of choice.
Notes
- If you want the sauce to be a little more of a vibrant yellow add small amounts of Tumeric until the colour pops.
- This recipe can also be made in a slow cooker. The sauce may seem a little runny so add some arrowroot to thicken her up. Be careful not to add no more than a tbsp as the sauce thickens more when cooled.
