- Pre-heat the oven to 200°C. Cover a baking tray in parchment paper and place a square grate on top making sure to spray it with Olive Oil.
- Grab 2 mixing bowls, In one whisk your eggs in one. In the second combine the rest of the dry ingredients in the other. Don't forget to blitz the cornflakes to the desired texture you want your crumbs to bed. (I like mine chunky)
- Coat your chicken first in the egg mixture then dip it into the cornflakes mixture and coat until chicken is fully covered and place on the tray
- Place chicken in the oven and back for 15 minute then remove from the oven to top with tomato paste and cheese and slide back into the oven and cook until cheese is melted.
