For those looking for a quick recipe for Good Friday or even just a bit of omega 3 in your diet then try your hand at these golden squid rings. 100% compliant and best of all they are shallow fried golden brown.

  • Blend Cornflakes in a food possessor until fine.
  • Combine cornflakes, coconut flour, salt, monk fruit, lemon pepper, garlic powder and onion powder in a large bowl.
  • In 2 separate bowls beat your eggs in the first and place your arrowroot in the second.
  • To coat the rings first place the calamari in the arrowroot then dip in the egg and then drop them into the coating mixture.
  • Once the tray is full place them in the fridge for 20 minutes.
  • In a pan heat up olive oil to 180°C and place rings into the pan.
  • Cook each ring for 90 seconds per side or until golden brown then remove from the pan and place to drain on paper towel and repeat the process for the remaining rings.
  • To serve: I created a dip made from sweet chili sauce and mayo.

Notes

I also tried this recipes in the oven but sadly it just dried out the flour. Shallow frying is the way to go. Also alot quicker
