Oven Baked Chicken Avocado Melt

Avocado is one of my all-time favourite healthy fats and I love pairing it with almost of any food possible. So how could you go wrong with a combination of avocado, chicken and bacon? This recipe is very easy to make and great for the whole family.

  • Slice your 2 large chicken in half creating 4 slices of chicken. Season with salt, pepper and bacon seasoning and place in the over at 180°C for 10 minutes or until the meat starts to turn white.
  • GUACAMOLE
  • While the chicken is cooking, combine all your ingredients for guacamole in a bowl and mash it together with a fork. Mash to the consistency you like.
  • GARNISH AND CHICKEN
  • Remove your chicken from the oven and spoon the guacamole evenly over each of the chicken breasts and lay your bacon on top and place back in the oven and cook for a further 10 minute or until bacon begins to crip around the edge then remove again and sprinkle cheese. and return the oven to finish cooking until cheese is melted.
