As soon as I found out I could have brown rice in my diet again I needed to make this recipe, Almond Satay Fried Rice. It is one of my all-time favourites.
For those of you who can’t have peanuts like myself, don’t think I haven’t forgotten about you. It’s time to replace them with Almonds.

Instructions
- Place all the ingredients for your sauce into a small microwave-safe bowl and heat for 2 minutes or until melted and site aside. Depending on the type of almond spread, heating may not be needed.
- Cook your rice as per instruction on the package and set aside to cool.
- Heat some olive oil in a frying pan add your onion, ginger, garlic and finely diced capsicum and stir until onions are brown and capsicum are soft.
- Add the finely chopped broccolini heads and pour in 1/4 cu[ amount of water or stock. Cover the pan and allow the vegetables to cook for a further 4 minutes.
- Remove the lid and add the remaing vegetables and rice.
- In a sepeate pan sear your beef until brown with 1 tsp each of ginger and garlic. I like to use butter to enchance the flavours.
- Once meat is cooked combined the mean with the vegtable and rice mixture and go ahead and start stiring in your satay mixture and stir until combined.
